Sydney, NSW | Full-Time, Permanent | Venue Leader
The operational heartbeat of the venue.
SRG Hospitality is looking for a Restaurant Manager to own the day-to-day performance of one of our premium venues — the most present, most accountable leader on the floor, setting the tone, holding the standard, and making sure our hospitality DNA is felt by every guest, every shift.
The Opportunity
As Restaurant Manager, you’ll take full ownership of your venue’s operational performance — leading the FOH team directly, partnering closely with the Head Chef, and driving a relentless focus on guest experience, team development, and commercial discipline. You’re the one who knows the numbers, knows the team, and knows exactly what “good” looks like on the floor — because you built it.
Reports to: Operations Manager
Leads: Assistant Restaurant Manager, Restaurant Supervisors
Works closely with: Head Chef
Location: Sydney, NSW
What You’ll Do
- Own the guest experience — lead FOH from the front, set the standard for every interaction, and handle service recovery with genuine care.
- Lead and develop your team — coach performance early, onboard new starters with intent, and build succession for your Supervisor roles.
- Drive commercial performance — manage labour cost against trading patterns, track revenue against budget, and spot opportunities in events, private dining and upsell.
- Maintain venue standards — uphold presentation, equipment and compliance standards, and keep FOH and BOH working as one team.
- Keep leadership informed — deliver a clear weekly update to your Operations Manager, with no surprises and always a proposed course of action.
- Own compliance and WHS — RSA, food safety, WHS and licensing aren’t a checklist, they’re a daily leadership responsibility.
What We’re Looking For
- Proven experience leading, developing and performance-managing a FOH team in a high-volume hospitality environment.
- Strong commercial awareness — hands-on experience with labour costs, rostering and venue-level revenue.
- High emotional intelligence and the communication skills to build genuine rapport with team, guests and senior stakeholders.
- A structured, proactive operator — someone who reports clearly, solves problems early, and implements lasting fixes, not band-aids.
- Working knowledge of SevenRooms or an equivalent reservation platform.
- Understanding of HIGA award obligations, wage compliance and WHS Act 2011 requirements.
- RSA Certification (NSW) and Food Safety Supervisor Certificate (NSW).
- Full working rights in Australia.
