Sanctuary Cove Golf and Country Club is one of Australia’s most prestigious golf and lifestyle destinations. We are currently seeking an experienced and passionate Sous Chef to join our high-performing culinary team.

This is an exciting opportunity for a motivated chef who thrives in a premium hospitality environment and is looking to take the next step in their leadership career. Working closely with the Executive Chef, you will play a key role in delivering exceptional dining experiences across our à la carte restaurant, member events, corporate functions, and special occasions.

The Role

Reporting to the Executive Chef, the Sous Chef is responsible for supporting the effective operation of all kitchen and food production areas. This hands-on leadership role ensures the consistent delivery of high-quality food while maintaining labour efficiency, food cost control, food safety compliance, and exceptional service standards.

You will lead by example during service, mentor and develop the kitchen team, and assist in maintaining the high standards expected at one of Australia’s premier private golf clubs.

Key Responsibilities

  • Assist the Executive Chef in leading all kitchen operations across the Club’s food and beverage outlets, functions, and events
  • Ensure the consistent preparation and presentation of high-quality food to established recipes and standards
  • Support the development of seasonal menus, daily specials, and function menus that align with member expectations and business objectives
  • Monitor food quality, portion control, stock rotation, and food safety practices to minimise waste and maintain compliance
  • Assist in controlling food and labour costs through effective ordering, rostering, and productivity management
  • Supervise and lead chefs, apprentice chefs, cooks, and kitchen hands during service, ensuring a positive and productive team environment
  • Assist with recruitment, induction, training, coaching, and performance management of kitchen staff
  • Plan and prepare for busy service periods, ensuring sufficient mise en place, staffing, and operational readiness
  • Maintain high standards of cleanliness, organisation, and workplace safety throughout all kitchen areas
  • Build positive working relationships with front-of-house teams to ensure seamless service delivery
  • Respond professionally to member and guest feedback, assisting with the resolution of food-related concerns where required
  • Ensure compliance with food safety legislation, Workplace Health and Safety requirements, and Company policies and procedures

About You

  • Trade qualification in Commercial Cookery
  • Demonstrated experience in a quality hospitality venue at Chef de Partie level or above
  • Strong experience in premium à la carte dining and function catering
  • Proven leadership skills with the ability to motivate, train, and develop kitchen teams
  • Excellent organisational skills with the ability to perform under pressure in a fast-paced environment
  • Strong understanding of food cost control, ordering, stock management, and labour management principles
  • Sound knowledge of food safety legislation, HACCP, and workplace health and safety requirements
  • A positive, hands-on approach with a passion for quality food and exceptional service
  • Flexibility to work a rotating roster including evenings, weekends, and public holidays
