The Position:

We’re looking for a Sous Chef to join our award-winning Culinary Arts team.

As the Sous Chef you will provide the highest quality customer service to patrons of Palette Restaurant and ensuring that all day-to-day requirements, in the successful running of the kitchen areas are met, on a timely basis.

What You’ll Be Doing:

  • Supporting the Executive Chef and Chef de Cuisine in the daily operation of the HOTA Culinary Arts kitchen
  • Working collaboratively with the Culinary Arts – Kitchen Team, Food & Beverage Team and Sales & Events Team.
  • Ensuring full compliance with Workplace Health & Safety requirements and HOTA policy guidelines at all times
  • Assisting to deliver budgeted sales, food cost, and wage targets through effective planning, time management, and resource allocation
  • Monitoring and tracking food costs, deliveries, and supplier performance
  • Completing monthly stocktakes and maintaining accurate inventory records
  • Driving a zero-waste approach through strong menu planning, stock control, composting, and use of the kitchen garden
  • Maintaining accurate timekeeping and payroll records using HOTA systems
  • Supporting consistent high-quality food production, presentation, and service standards
  • Ensuring compliance with all food handling, sanitation, hygiene, and temperature control standards
  • Attending daily kitchen briefings and relevant operational meetings
  • Collaborating with front of house teams to ensure smooth and consistent guest experience
  • Performing additional duties as required by the Chef de Cuisine and Executive Chef

What You’ll Bring:

  • Proven experience as a Sous Chef or senior kitchen leadership role in a high-volume commercial kitchen
  • Strong understanding of food safety, hygiene, and Workplace Health & Safety compliance
  • Demonstrated ability to manage food costs, stock control, and labour efficiency
  • Leadership capability with experience training, mentoring, and developing kitchen teams
  • Strong interpersonal and communication skills with the ability to motivate and influence others
  • A hands-on approach with the ability to step into any kitchen role when required
  • Excellent organisational skills with the ability to manage competing priorities
  • A strong commitment to quality, consistency, and continuous improvement
  • Availability to work flexible hours including evenings, weekends, and public holidays
