The Job:

We are seeking a passionate and experienced Chef de Partie to join our vibrant kitchen team at The Glenmore Hotel, located in the heart of The Rocks, Sydney. The Glenmore Hotel is renowned for its lively atmosphere, quality pub-style food with a modern twist, and exceptional service. As a Chef de Partie, you will play a key role in delivering outstanding culinary experiences to our guests.

Key Responsibilities

  • Manage and lead a specific section of the kitchen, ensuring dishes are prepared and presented to the highest standards.
  • Supervise and mentor junior kitchen staff, fostering a positive and collaborative team environment.
  • Prepare ingredients, cook dishes, and maintain a clean, organized workstation.
  • Collaborate with the Head Chef and Sous Chef on menu development, seasonal offerings, and recipe execution.
  • Ensure strict adherence to food safety, hygiene, and HACCP standards.
  • Monitor inventory, place orders, and maintain stock rotation to minimize waste.
  • Work efficiently under pressure, maintaining high productivity and quality during busy service periods.

Requirements

  • Minimum 2 years’ experience as a Chef de Partie or in a similar role.
  • Strong knowledge of food safety and hygiene regulations.
  • Excellent organizational, multitasking, and communication skills.
  • Ability to work as part of a team and thrive in a fast-paced environment.
  • Full Australian working rights.

Salary: $75,000 – $80,000 depending on experience.
