The Role

Reporting to the Group General Manager, you will oversee all aspects of venue operations — leading large teams across FOH, BOH, bar, and entertainment to deliver seamless, high-volume service and an immersive guest experience. This is a hands-on leadership role in a fast-paced, high-profile, environment.


Key Responsibilities
Operations & Service

  • Oversee daily operations across all departments
  • Ensure smooth, high-volume service during peak periods and events
  • Maintain venue readiness, procedures, and compliance

Leadership & Team

  • Recruit, train, and lead a large, diverse team
  • Manage rostering, performance, and team development
  • Lead from the floor during busy service

Guest Experience & Brand

  • Deliver a consistent, immersive themed experience
  • Manage VIPs, media, and high-profile guests
  • Resolve issues quickly while protecting brand reputation

Financial Performance

  • Manage budgets, P&L, labour, and cost controls
  • Drive revenue through events, promotions, and upselling
  • Monitor KPIs including sales, turnover, and guest satisfaction

Events & Entertainment

  • Coordinate themed events and entertainment
  • Work with performers and production teams to deliver seamless experiences

Stock, Safety & Compliance

  • Oversee inventory, ordering, and supplier relationships
  • Maintain food safety, licensing, and venue compliance
  • Manage incidents and ensure safe operations

About You

  • Proven leadership in high-volume, fast-paced venues
  • Experience managing large teams (40+ staff)
  • Strong operational, financial, and organisational skills
  • Confident communicator with a hands-on leadership style
  • Passion for hospitality and delivering exceptional guest experiences
  • Ability to perform under pressure in a dynamic environment

Requirements

  • Minimum 5 years’ restaurant/venue management experience
  • Strong background in high-volume, full table service
  • Current RSA & RMLV
  • Solid financial acumen (P&L, labour, stock control)
  • Pre-opening experience highly regarded

Highly Desirable

  • Experience in themed or entertainment-driven venues
  • Events, launches, or media experience
  • First Aid / Training qualifications
  • Hospitality or Hotel Management diploma
