Key Responsibilities & Skills:

Operational Management

  • Report directly to the Group General Manager and liaise with the Venue Head Chef
  • Oversee day-to-day venue operations (FOH, BOH, bar, entertainment areas)
  • Ensure smooth service during high-volume periods (peak dining, events, premieres)
  • Develop and manage opening/closing procedures and venue readiness
  • Maintain compliance with health, safety, and licensing regulations

Team Leadership & Staffing

  • Recruit, train, and develop a large, diverse team (servers, bartenders, hosts, performers)
  • Schedule staff efficiently for high-capacity service
  • Lead by example on the floor during busy service
  • Manage performance, coaching, and conflict resolution

Guest Experience & Brand Delivery

  • Deliver an immersive, movie-themed experience (service, atmosphere, storytelling)
  • Manage VIP guests, influencers, media, and high-profile clientele
  • Resolve complaints quickly while protecting brand reputation
  • Ensure consistency in themed service standards and presentation

Financial & Commercial Performance

  • Manage budgets, P&L, and cost controls (labour, food, beverage)
  • Drive revenue through upselling, events, and themed promotions
  • Monitor KPIs (sales, foot traffic, table turnover, customer satisfaction)
  • Partner with marketing on campaigns, launches, and seasonal activations

Event & Entertainment Coordination

  • Plan and execute themed events
  • Coordinate with performers, AV teams, and production staff
  • Ensure seamless integration of dining and entertainment experiences

Stock & Supplier Management

  • Liaise with Head Chef on menu costing and reporting
  • Manage inventory, ordering, and stock rotation
  • Maintain supplier relationships for food and beverage
  • Minimise waste and manage stock variance

Health, Safety & Compliance

  • Enforce food safety standards and venue safety protocols
  • Ensure crowd control and capacity compliance
  • Manage incident reporting and emergency procedures

Skills and Experience:

Leadership & People Management

  • Proven leadership in high-pressure, fast-paced environments
  • Experience managing large teams (40–90+ staff)
  • Strong coaching and team development capability

High-Volume Operations Expertise

  • Background in large-scale venues (restaurants, bars, entertainment venues)
  • Ability to manage service flow for high guest volumes

Customer Experience Focus

  • Strong hospitality mindset
  • Confidence dealing with VIPs and high-profile clientele
  • Excellent problem-solving under pressure

Commercial & Financial Acumen

  • Solid understanding of P&L, labour costing, and stock control
  • Ability to drive revenue while managing costs

Communication Skills

  • Clear, confident communicator across all levels
  • Ability to coordinate across kitchen, floor, and entertainment teams

Organisation & Multitasking

  • Strong planning and time management skills
  • Able to balance operations, events, staffing, and guest needs simultaneously

Adaptability & Creativity

  • Comfortable in a dynamic, theatrical environment
  • Creative approach to enhancing guest experience

Position Requirements:

  • Duly qualified with strong full table (a la carte) service track record in a high volume, high profile venue
  • Minimum 5 years restaurant management experience in a high capacity, tale service environment
  • Holder of current RMLV and RSA
  • Hospitality Financial acumen P&L, Wage and stock control
  • Venue pre-opening and opening experience

Highly Desirable:

  • Current First Aid certificate desirable
  • Train the trainer certificate highly regarded
  • Background in themed venues, immersive dining, or entertainment hospitality
  • Experience with large events, launches, or media nights
  • Knowledge of film/pop culture to enhance thematic delivery
  • Social media or brand engagement awareness
  • Diploma in hotel management
