Description

The Royal Albert Hotel is looking for an experienced and motivated Head Chef to lead our kitchen team and deliver consistent, high-quality food in a busy, fast-paced venue. This is a hands-on leadership role for a chef who thrives in a pub environment, enjoys building strong teams, and takes pride in delivering great service every day.

About the role

As Head Chef, you will take ownership of the kitchen operation, ensuring smooth service, strong standards, and a motivated team. You will lead by example on the pass and in the kitchen, managing day-to-day operations while maintaining food quality, safety, and consistency. The role suits someone who is calm under pressure, organised, and confident in running a high-volume venue.

Key Responsibilities

  • Lead, train, and motivate the kitchen team.
  • Oversee daily kitchen operations, prep, service, and stock control.
  • Maintain food safety, hygiene, and WHS standards.
  • Manage ordering, supplier relationships, and waste control.
  • Work collaboratively with venue management to ensure smooth service.
  • Support recruitment, rostering, and performance management within the kitchen.
  • Maintain consistency, quality, and presentation across all menu items.

About you

  • Proven experience as a Head Chef or senior Sous Chef in a busy pub, hotel, or restaurant.
  • Strong leadership skills and a hands-on approach.
  • Excellent organisational and communication skills.
  • Solid understanding of kitchen systems, stock control, and cost management.
  • Food Safety Supervisor certificate or willingness to obtain.
  • Ability to work well under pressure and lead a team through busy service periods.
