About the Role

Reporting to the Executive Sous Chef, you’ll play a hands-on leadership role in Astra’s kitchen — driving quality, mentoring your team, and ensuring every dish reflects the precision and artistry Japanese cuisine deserves.

Day to day you’ll be:

  • Leading fine dining food preparation with an emphasis on Japanese technique, flavour integrity, and sushi excellence
  • Supporting the Executive Sous Chef with food cost control, waste management, and kitchen reporting
  • Scheduling and managing kitchen staff in line with budget and business demands
  • Interviewing, training, and progressively developing kitchen personnel
  • Overseeing HACCP compliance and maintaining a clean, safe, and organised kitchen
  • Contributing to menu development, seasonal changes, and evolving guest demand
  • Maintaining consistent standards across every service — quality, presentation, and speed

 

What We’re Looking For

  • Demonstrated background in Japanese cuisine with strong sushi-making skills
  • Minimum 2 years’ experience in a similar role in a fine dining, high-volume kitchen
  • Certificate or Degree in Culinary Arts (preferred)
  • Food Safety/Handling certification (preferred) and solid knowledge of HACCP
  • A collaborative leader who communicates well and thrives under pressure
  • Flexibility to work varied shifts including nights, weekends, and public holidays
