Operations Manager
SRG Hospitality | Full-Time | Sydney (Multi-Venue)
This is an operational leadership role — not a desk job.
SRG Hospitality is a growing premium hospitality group operating some of Sydney’s most iconic venues. As we continue to scale, we’re appointing an Operations Manager to take ownership of execution, consistency, and performance across a cluster of venues.
This role exists to protect standards, stabilise performance, and develop Venue Managers — ensuring every venue operates compliantly, commercially, and in line with the SRG brand.

The Role
Reporting to the Group General Manager of Operations, you will be responsible for day-to-day operational performance across multiple venues.
Your focus will be on:
- Enforcing group standards (not re-interpreting them)

- Driving labour efficiency and cost control

- Maintaining compliance across liquor, gaming, WHS, and Fair Work

- Coaching and strengthening Venue Managers

- Intervening early in underperforming venues

- Providing clear operational insight to head office
This is a visible, floor-led leadership role — you will be present in venues, not managing from afar.
What You’ll Be Accountable For

Operational consistency: SRG standards executed clearly and consistently across all venues in your cluster

Financial discipline: Labour deployment, roster optimisation, and COGS control within approved parameters

Compliance confidence: Liquor & Gaming NSW, Fair Work, WHS, and internal requirements met at all times

Venue leadership: Building capable, confident Venue Managers through coaching and intervention

Performance recovery: Stabilising underperforming venues quickly and decisively

Operational insight: Providing accurate, timely reporting and escalating risks early
What We’re Looking For
You’ll bring:
- Proven experience managing multiple venues or a large, complex hospitality site

- Strong operational capability across FOH, BOH, and gaming (where applicable)

- Deep understanding of labour management, rostering, and cost control

- Working knowledge of the Hospitality Industry Award / Restaurant Industry Award and Fair Work obligations

- Strong grasp of NSW liquor, gaming, RSA, and incident-management requirements

- A calm, confident leadership style — comfortable stepping into difficult situations

- High attention to detail and the discipline to uphold standards under pressure
Qualifications & Requirements
- Current RSA certification

- Working knowledge of NSW liquor compliance

- Ability to travel regularly between venues

- Availability to work nights and weekends as required by operations
