Mr. Mills, an eclectic destination bar and late-night supper club, inviting guests to unwind in cosy booths or enjoy their meals at the bar or open kitchen. The menu will feature an array of small plates showcasing Iberian classics alongside more substantial offerings, all complemented by a diverse cocktail selection and an impressive wine list that highlights both local Victorian wines and European favourites, particularly Vinho Verde and selections from the Douro Valley. With a capacity for around 100 guests, Mr Mills will create a vibrant yet intimate setting that encourages conviviality and exploration of flavours.

Summary:

As a bartender, you are expected to adhere to all standards, policies, and procedures related to beverage service as established by the management team, with a strong emphasis on guest satisfaction. All tasks should be performed in accordance with departmental guidelines. A commitment to delivering exceptional hospitality should be at the heart of everything you do.

Responsibilities:

  • To serve drinks to guests in a friendly and helpful manner, bearing reference to service policies and procedures
  • Communicate with colleagues/guests with regards to beverage orders
  • Showcase a full knowledge of the menu offerings to the guests
  • Be responsive and helpful with regards to off menu items such as classic cocktails
  • Sound knowledge of classic cocktails whilst always endeavouring to improve your personal knowledge in this area as much as possible
  • To ensure glassware and utensils are washed and polished as required and ensure items are always correctly stored and organised
  • Always follow recipes according to standards and specifications
  • Report all comments/complaints/problems to the management team
  • Responsibility for the barback’s duties and checking their tasks are being done in a professional manner and to the standards specified by the Bar Manager
  • Report for duty punctually in the correct uniform, paying attention to personal hygiene and tidiness as laid out in our grooming standards
  • Help to maintain a good working environment within the department and good working relationships with all other departments in the building

Requirements

  • Proven experience as a bartender in a high-end or fine dining establishment.
  • Extensive knowledge of mixology, cocktail preparation, and wine pairings.
  • Exceptional communication and interpersonal skills.
  • Ability to thrive in a fast-paced environment while maintaining professionalism and attention to detail.
  • Availability to work flexible hours, including nights, weekends, and holidays.
  • A neat appearance and a positive, engaging personality.
  • Relevant certifications in bartending and mixology are a plus.
