We are seeking a skilled and passionate Sous Chef to lead a quality-focused kitchen. This is a practical 2IC role: strong service leadership, disciplined prep, clear food-safety habits, and calm team direction.
The salary range is from $75K-$80K.
Responsibilities:
- Lead day-to-day prep and service (including running the pass/sections), maintaining consistency and pace
- Support the Head Chef with kitchen leadership, standards, and culture
- Execute menus to spec and contribute to specials/menu development where appropriate
- Manage stock control: ordering, receivals, storage, stocktakes, wastage reduction
- Maintain strong food safety and hygiene systems (cleaning schedules, temperature checks/logs, safe storage)
- Uphold allergy-aware practices and clear communication to front-of-house on requests and changes
- Assist with rostering and labour planning to match trade and functions
- Train and mentor apprentices/CDPs/kitchen hands; give clear feedback and lift standards
Qualifications:
- Trade qualified (Cert III/IV in Commercial Cookery or equivalent) and at least 3+ years in a senior kitchen role
- Proven ability to lead in a fast-paced service environment and keep standards consistent
- Strong food safety knowledge (HACCP-style controls) and confident allergen awareness/communication
- Good systems thinking: prep planning, stock rotation, cost control, and tidy documentation
- Full Australian working rights (citizen/PR/valid visa) and willingness to provide checks as required.
