As our business continues to grow, we are excited to offer an opportunity for a passionate and detail-oriented Chief Steward to lead our Stewarding team at Joondalup Resort.
Lead the stewarding team to keep our kitchens and back-of-house areas spotless, safe and service-ready.
Salary negotiable based on experience.
Key responsibilities
• Lead daily stewarding operations in daily basis: dishwasher section, BOH cleanliness, support Banquet setup for functions and organisation.
• Enforce sanitation and hygiene standards, including cleaning schedules, correct chemical usage, and dish machinery cleaning and operation controls.
• Verify hygiene controls through consistent checks and documentation (chemical levels and water temperature verification where applicable).
• Deliver labour efficiency: build and manage costed rosters aligned to business volume; confirm worked hours and deploy resources effectively across shifts.
• Control stewarding cost: breakage/loss prevention, inventory variance reduction, budget adherence, and continuous improvement in consumables usage.
• Stewarding equipment readiness: routine cleanliness and condition inspections, proactive escalation of faults, and coordination for repairs and/or replacements.
• Manage stock, par levels and requisitioning orders and cleaning supplies; conduct and act on stocktakes and monthly shortage reporting.
• Partner with Head Chef, Venue Manager, and Banquets Team to deliver smooth plate-ups, buffet support, and storage of banquet operational equipment.
• Lead, train and performance-manage the stewarding team: recruitment support, onboarding, coaching, and building a high-standard culture.
About you
• Proven experience leading stewarding (or kitchen utility) operations in a high-volume hotel, resort, club, large venue or catering environment.
• Strong working knowledge of kitchen hygiene and sanitation standards and the discipline to enforce cleaning routines at pace and under pressure.
• Sound understanding of WHS hazards in food service environments (chemicals, slippery floors, hot surfaces, manual handling, machinery) and practical risk control habits.
• Confident people leader: coaching, accountability, shift supervision, and constructive performance conversations.
• Strong communication and cross-functional coordination.
• Willingness to work across multiple outlets.
• Availability to work a rotating roster including weekends and public holidays (as operationally required).
