Job Summary
The Sous Chef at Hyegrove Willoughby, part of the Heart of Willough by precinct, plays a critical role in delivering exceptional dining experiences for a diverse clientele, including Hyegrove’s luxury retirement living residents, and HyeCare’s aged care community (47 high-care suites and 111 assisted living apartments). Working under the Head Chef, the Sous Chef ensures high-quality, nutritious, and visually appealing meals that align with Hyegrove’s & Hyecare’s vision of excellence, wellness, and community connection. The role supports dining operations to provide tailored meal services for residents, meeting the strengthened Aged Care Quality Standards.
Key Responsibilities
•Culinary Execution: Assist in preparing and presenting high-quality dishes for Hyegrove’s & Hyecare’s dining areas, event spaces, and catering services, ensuring consistency, flavor, and aesthetic appeal.
•Menu Development: Collaborate with the Head Chef to design seasonal menus that cater to diverse tastes, including luxury retirement residents, and aged care dietary needs (e.g., texture-modified meals for HyeCare’s 47 high-care suites).
• Kitchen Operations: Supervise and train kitchen staff, including Kitchen hands and Relief Chef, to maintain efficiency during high-volume service periods and events.
• Quality & Compliance: Uphold food safety and hygiene standards in line with Australian regulations, ensuring compliance with Aged Care Quality Standards for meals served to HyeCare residents.
•Inventory Management: Monitor food stock, place orders with local suppliers, and minimize waste to support cost control and sustainability.
•Team Leadership: Assist in scheduling kitchen staff, fostering a positive and collaborative work environment, and stepping into the Head Chef’s role when required.
•Resident-Centric Care: Work with HyeCare’s care team to deliver personalized dining experiences for assisted living and high-care residents, accommodating dietary restrictions and preferences.
Qualifications & Skills
•Experience: 5-7 years in a professional kitchen, with at least 2 years in a supervisory role (e.g., Sous Chef or Senior Chef de Partie); experience in aged care, hospitality, or high-volume dining is highly desirable.
•Education: Culinary school diploma or equivalent professional training; knowledge of senior nutrition is a plus.
•Technical Skills: Advanced proficiency in cooking techniques, menu development, and adapting recipes for dietary needs (e.g., low-sodium, pureed, or allergen-free diets).
•Leadership: Proven ability to lead, train, and inspire a kitchen team in a dynamic, community-focused setting.
•Communication: Excellent interpersonal skills to coordinate with care staff, club management, and residents for seamless dining operations.
•Certifications: Food Safety Supervisor Certificate (NSW) or equivalent; First Aid training is advantageous.
