Lead the Pastry Team at Entrecôte

Entrecôte is Melbourne’s most iconic Parisian brasserie. For over a decade we have been known for classic French cooking, caviar, cocktails, private dining and one of the city’s great wine lists.
We are now seeking a Head Pastry Chef to lead and elevate our pastry and dessert program.
This is a senior leadership role within a large, high-performance kitchen. You will own everything from menu development and production systems through to team leadership, costing, consistency and creative direction.
Working closely with the Culinary Director and Head Chef, you will ensure desserts, petits fours, afternoon tea and event pastry reflect the Entrecôte brand and deliver both impact and commercial performance.

The Role
You will be responsible for:
- Leading all pastry production across service, events and private dining
- Designing, costing and delivering seasonal dessert menus
- Setting and maintaining plating, quality and portion standards
- Building and managing pastry production systems
- Recruiting, training and leading the pastry team
- Controlling food cost, waste and labour within budget
- Ensuring food safety, allergen and hygiene compliance
About You
You will bring:
- Proven experience in high-end restaurant or bistro pastry
- Strong knowledge of French pastry and classic techniques
- Experience leading a pastry section or team
- Certificate IV in Commercial Cookery
- Two years of full time work experience
- Excellent organisation, communication and people leadership
- Strong commercial awareness of food cost, yield and labour
- A calm, disciplined and professional working style
