Chef de Partie – Cibaria Manly

Cibaria Manly is a beachside Italian venue offering a diverse selection of ‘rias’, celebrating the best of Italian food and drinks.

Think antipasti, pizzettas, pasta, cocktails, vino, and mouth-watering gelato, all served with top-tier hospitality in a prime location opposite Manly Beach. With 350 seats, Cibaria is set to become a local favourite.

We are looking for Chef de Partie to join our team across different sections:

Forneria (woodfire cooking), Braceria (grill), Spaghetteria (fresh pasta), and Pasticceria (pastry).

You’ll work closely with our Executive Chef team, who have been with Alessandro Pavoni for over a decade.

Positions Available:

• Casual positions to start, with full-time opportunities for the right candidates

Essential Requirements:

• Full Australian working rights

• Fluent in English

• Minimum 2 years’ experience in a similar role

• Ability to perform under pressure

• Positive attitude and strong attention to detail

• High grooming standards and a passion for hospitality

• Availability to work weekends and holidays

Preferred Requirements:

• Formal hospitality studies completed

• Food Safety Supervisor Certificate

• Experience with fresh pasta, pastry, butchery, woodfire cooking

• Prior venue opening experience

• Strong knowledge of Italian cuisine

• Collaborating on menu planning, recipe development, and tasting notes

• Delivering consistent, high-quality dishes aligned with venue standards

• Ongoing staff training and mentoring

• Ensuring food health & safety compliance

• Managing cost control and efficiency
