About Ormeggio 3.0

Ormeggio at The Spit is entering an exciting new chapter — Ormeggio 3.0.

Located within the stunning d’Albora Marina in Mosman, Ormeggio has spent the past 17 years establishing itself as one of Australia’s leading Italian dining destinations, proudly holding Two Chef Hats and earning recognition for refined food, genuine hospitality, and innovation.

As part of our evolution, our menu is expanding to balance land and sea — introducing premium meat offerings alongside our signature seafood-focused cuisine, while remaining deeply rooted in Italian tradition.

We are now seeking a passionate and motivated Chef de Partie to join our growing kitchen team.

The Role

Working closely with our Executive Chef and senior kitchen leadership team, you will play an integral role in delivering refined, high-quality dishes while contributing to the ongoing evolution of Ormeggio 3.0.

This is an excellent opportunity for a chef looking to further develop their fine dining experience within one of Sydney’s most respected hospitality groups.

What We’re Looking For

Essential

  • Full Australian working rights
  • Fluent English communication skills
  • Formal cookery qualification (minimum Certificate III in Commercial Cookery)
  • 1–3 years’ experience in a fine dining kitchen
  • Strong knowledge of and passion for Italian cuisine
  • Excellent organisation and attention to detail
  • Ability to work calmly and efficiently under pressure
  • Strong teamwork and communication skills

Preferred

  • Experience working in hatted or premium dining venues
  • Experience with fresh pasta, seafood, and premium meat preparation
  • A genuine interest in refined Italian cuisine and seasonal produce

Key Responsibilities

  • Execute refined food preparation and presentation to Ormeggio’s high standards
  • Manage your section efficiently during service
  • Assist with menu development, tastings, and seasonal dish creation
  • Maintain consistency, quality control, and portion standards
  • Support and mentor junior kitchen team members
  • Uphold food hygiene, safety, and kitchen cleanliness standards
  • Collaborate positively within a professional and high-performing brigade
