  • About the role
  • You’ll organise daily operations, prioritise guest experience, and lead a team of 25 across lunch and late trade. You’ll own rostering, cost control, compliance, and training programmes, ensuring every shift runs smoothly.
  • Key responsibilities
  • Organise weekly rosters to meet demand and labour targets; approve timesheets.
  • Lead pre-service briefings; maintain service standards and colour-coded section layouts.
  • Monitor COGS and wastage; standardise ordering and stock rotation; complete stocktake catalogues.
  • Oversee RSA and Food Safety programme compliance; ensure all permits and licences are current.
  • Coach and performance-manage FOH; run onboarding and ongoing training to instil best practice.
  • Manage guest feedback and incident logs; recognise trends and action improvements.
  • Maintain venue assets; schedule repairs; manoeuvre small equipment safely as needed.
  • Build fortnightly sales forecasts; coordinate promos with marketing; update POS.
  • Liaise with suppliers; receive deliveries; verify dockets; prioritise discrepancies.

  • Proven leadership in restaurants, hotels, or hospitality groups.
  • Exceptional ability to organise people, prioritise under pressure, and communicate clearly.
  • Strong grasp of RSA/Food Safety compliance; comfortable with audits.
  • Skilful with POS, rostering, and inventory systems; intermediate Excel/Sheets.
  • Flexible availability, including weekends and public holidays; comfortable with late trade.
  • Current driver’s licence helpful for off-site runs (not essential).
