We are seeking a full-time Chef de Partie to support and help drive kitchen operations at Fortress Sydney! Join our fast-paced team and become an integral part of one of the biggest entertainment hospitality venues in Australia!

To succeed in this role, you’ll be an experienced kitchen professional who is mature, energetic, and a positive team player. You’ll relish the opportunity to work with ingredients and dishes prepared skillfully in-house and from scratch. You’re comfortable problem-solving on the fly, even without a set procedure, and able to motivate and support colleagues, modelling high standards of service and communication.

About the Role

As our full-time Chef de Partie, you will be responsible for:

  • In collaboration with the kitchen management team, supporting Fortress Sydney’s kitchen and catering operations across the full venue.
  • Supporting the supervision of kitchen staff to consistently ensure the in-house delivery of high-quality food products.
  • Ensuring the smooth running of kitchen operations during all functions and events.
  • Fostering a positive culture of engagement and motivation within the kitchen team.
  • Leading and supporting the kitchen team, running sections as needed, and serving as a support and mentor figure.
  • Delivering on effective food waste management.
  • Upholding food safety, policies, and workplace standards.
  • Assisting with training and development within the kitchen team

This position is classified as a Grade 6 non-exhibition full-time role under the Amusement, Events & Recreation Award.

What You’ll Bring

  • 3+ years of demonstrated experience in a similar fast-paced hospitality kitchen environment
  • Formal kitchen qualifications will be an advantage
  • Good knowledge of various cuisines and methods
  • Sound interpersonal and communication skills, both written and verbal
  • Excellent organisational and time management skills
  • A professional standard of presentation with a friendly demeanour, an approachable attitude and a willingness to support other team members
  • Flexibility to work a variable roster around the event schedule, including weekends and nights as required
  • Full ongoing working rights in Australia
