Poor Toms began with two friends, Jesse and Griff, who share a middle name ‘Thomas’, a suspicion of tradition, and a passion to bring real pleasure to people’s lives. In 2014 they joined forces with Marcel Thompson, one of the Trans-Tasman Bubble’s most experienced gin distillers who produced Gordon’s Gin and Tanqueray Gin in New Zealand on copper pot stills from pre-war London. Just like the flat white, this creative partnership threw out the gin rule book and crafted a gin that was uniquely Australian with the addition of strawberry gum, chamomile, fresh green apple and garnished with a strawberry. Named after King Edgar’s character in Shakespeare’s King Lear, Poor Toms makes drinks that uniquely capture a time and place, and are driven by curiosity and imagination.
