Sous Chef – Kai Whakapai

Primary Purpose

The Sous Chef works closely with the Head Chef to deliver consistently high standards of food and service at Kai Whakapai. They take responsibility for the kitchen in the Head Chef’s absence, lead the team on shift, and contribute to the development of menus, systems, and staff training. The role balances creativity with operational excellence, ensuring Kai lives up to its name: “food made extremely well.”

Key Responsibilities

Leadership & Team

  • Lead the kitchen during rostered shifts and in the absence of the Head Chef.
  • Foster a fun, respectful, and disciplined work environment.
  • Train, mentor, and support junior staff, ensuring high standards of cooking, hygiene, and presentation.
  • Provide feedback, guidance, and hands-on coaching when standards or consistency need improvement.

Menu & Food Quality

  • Support the Head Chef in menu development, including specials and seasonal updates.
  • Uphold Kai’s standard of “recognisable, authentic, and well-presented” food.
  • Spot-check dishes for presentation, taste, and temperature before they leave the kitchen.
  • Ensure recipes, portions, and ticket times are strictly followed for quality and cost control.

Operations & Efficiency

  • Take responsibility for all kitchen operations when on duty: prep, service, cleaning, and closing.
  • Assist with ordering, stock control, and supplier relationships.
  • Monitor waste and contribute ideas for efficiency and cost reduction.
  • Maintain equipment in safe working order, reporting or arranging repairs as needed (with approval).

Health, Safety & Compliance

  • Maintain food safety and workplace health & safety standards at all times.
  • Keep CHOMP and all required documentation up to date.
  • Ensure correct storage, labelling, and rotation of all food (FIFO).
  • Lead by example with impeccable hygiene and personal presentation.

Communication & Administration

  • Liaise proactively with the Head Chef and Owner regarding any concerns, unusual issues, or training needs.
  • Assist with recruitment, trials, and performance reviews where required.
  • Contribute to Kai’s long-term direction and culture through constructive input and collaboration.
