Description

Lead hospitality across our Canberra bakery cafés. Set the standard, grow the

leaders, and shape how Three Mills evolves

About us

Three Mills Bakery was established 10 years ago and, from humble

beginnings, has grown across the ACT to a team of more than 100 people,

multiple sites, and big plans for future growth.

Each of our sites has its own personality. Some are all about the dine-in café

experience, others are grab-and-go for busy workers and shoppers. Whatever

the site, customer experience is key.

At the heart of what we do: beautifully crafted, high quality, and downright

delicious bakery products, delivered through an experience that brings people

together.

We live by three things: Create Joy. Be Generous. Stay Curious.

We’re looking for an experienced hospitality leader to lead our Hospitality

function and help us deliver experiences customers won’t forget.

About the opportunity

This is a new role, and a pivotal one. We’ve grown fast, and our Hospitality

function has outgrown the way it was set up. We need a leader to bring it

together: one standard, clear roles, and leaders who are backed to lead.

You’ll lead a team of around 55 people across our cafés, through two

Hospitality Managers and a Site Lead at each site. You’ll report to our

Founder and sit on the leadership team, bringing the customer and front line

view into the decisions that shape the business.

What you’ll own:

● The standard: one way we serve, lived at every site on every shift.

● The leaders: building, leading and developing the managers and Site

Leads so each site runs well without you on the floor.

● The team: attracting, keeping and growing good people, with the

same onboarding at every site.

● The numbers: sales, wages, stock and waste across the function.

● The connections: working with our bakery, pastry, logistics and

support teams so what we make and deliver works at the counter.

You’ll be visible across our sites and know what good looks like from the

counter up, but your job is to build the leaders who run the floor, not to run it

yourself.

As Three Mills grows into new sites and regions, you’ll shape the hospitality

model that comes with us.

Hours: Full time, 38 hours a week.

Perks: Daytime trading, so no night shifts. All the coffee, sourdough and

pastries you can eat!

About you

You’ve led hospitality teams for years, including leaders who lead others,

ideally across more than one site. You came up through the ranks, so you

know what a busy Saturday feels like from behind the counter, and you think

well beyond the next shift.

You’ll recognise yourself in this:

● High standards: you notice the small things, because customers do.

You can lift a team to meet that standard consistently, not just when

you’re watching.

● A leader of leaders: you hold managers to account without doing

their job for them, and you have the hard conversation this week, not

next quarter.

● Commercial: you’ve been accountable for the numbers in a

hospitality team or business. You can explain a variance and do

something about it.

● Steady through change: you’ve stepped into a team that needed

structure and trust, and rebuilt both.

Lastly, a calm, confident communication style is vital. You balance care for

people with what the business needs, and you lead by example at every level.

Our sites are across Canberra, so you’ll need your own transport and a valid

driver’s licence.

If this sounds like you, apply online with your CV and a short statement (one

page at most) telling us about a time you lifted the standard of a hospitality

team, and how you did it.

We’ll review applications as they come in, so don’t wait. We’ll be in touch with

shortlisted applicants.
