- For leadership roles: proven experience running a floor, holding service standards, and developing a team.
Role Type
Description
THE BEST VIEW IN SYDNEY HOSPITALITY IS HIRING.
Every FOH role. Every level. Aqua Dining is Reopening.
Runners · Waitstaff · Bartenders · Supervisors · Assistant Managers
Milsons Point — above the pool, under the Bridge, next to Luna Park.
FOUR REASONS TO APPLY RIGHT NOW
1. You start earning immediately – Trial this week, contract within 48 hours, placed at one of our venues straight away. You are paid and trained across our existing restaurants before Aqua’s doors even open.
2. Runners become Operations Managers here. Runner → Waiter → Section Waiter → Supervisor → Assistant Manager → Restaurant Manager → Venue GM → Operations Manager. Every one of those seats is filled right now by someone who started further down it.
3. We are growing past 600 people in the next three months. Fifteen venues heading to twenty within six months. This reopening pulls people up across the whole group, which means seats open everywhere behind them.
4. You will open a Sydney landmark. Not join one. Open one. That stays on your résumé forever.

WHY THE TRAINING RAMP MATTERS
Most openings hire in October and open in November with a team that has never worked together.
We are not doing that. Every Aqua hire trains inside a live SRG venue first – Ripples, Sails, The Nielsen, Ventuno, The Fenwick, Riva. You will learn SevenRooms, our service sequence and our standards, and you will already know the people beside you.
By November this will not be a new team. It will be a trained team walking into a new room.
WHO WE WANT
On the floor: warmth, pace, pride in the detail, and the willingness to be taught. You do not need a fine-dining résumé. We will teach you properly.
In leadership: people who have run a floor, held a standard, developed a team, and understand that labour cost and guest experience are the same conversation.
Everyone: Heart. Ownership. Craft. Together. That is how we work.
THE LOCATION
Milsons Point. Harbour Bridge on one shoulder, Luna Park on the other, Opera House across the water, floor-to-ceiling glass on three sides.
There are maybe five dining rooms in this city with a view like this, and none of them are hiring an entire floor team at once.
Aqua is the address people book when the occasion actually matters — the proposal, the anniversary, the deal. That means the guests are invested, the standard is high, and the service you learn here is the service that opens doors everywhere else. “Aqua Dining, opening team” is a line on your CV that Sydney operators recognise instantly.
WHERE HOSPITALITY LEAVES ITS MARK
That is SRG’s line, and it is meant both ways — the mark we leave on guests, and the one this group leaves on the people who work in it.
Bill and Kathleen Drakopoulos opened Aqua in 2000. Everything else came after. Twenty-six years on, SRG is fifteen venues growing to twenty within six months — Sydney’s harbourside icons and neighbourhood favourites: Ripples, Sails, The Nielsen, The Fenwick, Ventuno, Riva, Akti, Noi, Summer Salt, and the food and beverage across The Langham, Sydney.
What that means for your career:
- Somewhere to go. Fifteen venues, forty-plus event spaces, and five more restaurants opening. Internal moves are normal here, not a favour.
- Real training, not a handbook. The SRG Wine Academy develops floor teams properly — product knowledge that makes you better paid and more employable for the rest of your career.
- Still family-run. Led by Bill and Kathleen’s four children. The people deciding where you go next know your name.
