About the Role

As a Chef de Partie, you will be responsible for managing your designated kitchen section, maintaining exceptional food quality and presentation standards, and supporting the leadership team in delivering outstanding dining experiences.

Employment Opportunities

Full-Time

  • Salary: $79,000 – $85,000 per annum plus superannuation

Casual

  • Hospitality Industry General Award (HIGA) rates apply, including applicable penalty rates and public holiday loadings

Key Responsibilities

  • Manage and maintain your designated kitchen section during service
  • Prepare and present dishes to the highest standards of quality and consistency
  • Support breakfast, lunch, and dinner services across the precinct
  • Prepare and cook a range of Italian dishes, including pasta, pizza, and à la carte menu items
  • Work collaboratively with Head Chefs and Sous Chefs to execute menus and maintain service standards
  • Contribute to menu development, recipe preparation, and menu implementation
  • Assist with menu costings and food cost management
  • Monitor food quality, portion control, and wastage
  • Ensure compliance with food safety, hygiene, and workplace health and safety requirements
  • Assist with stock rotation, ordering, and inventory control
  • Maintain a clean, organised, and efficient work environment

Minimum Requirements

  • Diploma of Hospitality Management and/or a minimum of 1–3 years’ relevant full-time work experience as a Chef de Partie or equivalent position
  • Demonstrated experience preparing and cooking Italian cuisine
  • Experience with pasta production and/or pizza preparation
  • Experience working across breakfast and à la carte service
  • Ability to contribute to menu development, recipe preparation, and menu implementation
  • Experience assisting with menu costings and food cost management
  • Knowledge of food safety, stock control, and kitchen hygiene standards
  • Ability to work effectively in a fast-paced commercial kitchen environment
  • Strong communication and teamwork skills
  • Full Australian working rights
  • Ability to successfully complete Crown Sydney Police and Compliance Checks
  • Availability to work a rotating roster including evenings, weekends, and public holidays

Preferred (Not Essential)

  • Experience with wood-fired pizza production
  • Experience with fresh pasta production
  • Experience within premium dining or high-volume hospitality venues
  • Italian language skills
  • Experience participating in menu tastings, recipe development, and cook-offs
