The Role 

Reporting to the Venue Manager and Group General Manager, the Assistant Venue Manager supports the Venue Manager in the daily leadership and operational execution of the restaurant. This role is responsible for driving exceptional guest experiences, supporting and developing the front-of-house team, maintaining service standards, and ensuring smooth, efficient operations across all shifts in a high-volume environment. This is a hands-on leadership role requiring strong floor presence, operational awareness, and the ability to lead by example during busy service periods.

Key Responsibilities

Operations & Service Delivery

  • Support the Venue Manager in the day-to-day running of a high-volume, full table service restaurant
  • Ensure smooth service delivery across lunch and dinner shifts, 7 days a week
  • Maintain consistent service standards, speed, and guest satisfaction during peak trade
  • Actively manage floor operations, including section allocation, table turn times, and service flow
  • Assist in opening and closing procedures, ensuring operational readiness and compliance

 Team Leadership & Development

  • Lead, motivate, and support front-of-house team members during service
  • Promote, encourage and foster the Bubba Gump Shrimp Co. brand with internal and external stakeholders
  • Assist with onboarding, training, and ongoing development of staff
  • Provide real-time coaching and feedback to improve performance and service delivery
  • Help foster a positive, energetic, and accountable team culture

Guest Experience

  • Act as a key point of contact for guest feedback and service recovery
  • Proactively engage with guests to ensure a high-quality dining experience
  • Resolve complaints promptly and professionally, escalating when required

Operational Standards & Compliance

  • Ensure compliance with all health, safety, and hygiene standards
  • Support rostering, labour control, and wage targets in line with business needs
  • Maintain venue presentation, cleanliness, and brand standards at all times
  • Assist in stock control, ordering processes, and wastage minimisation

Commercial Awareness

  • Support achievement of sales targets and KPI performance
  • Help drive upselling initiatives and service efficiency improvements
  • Monitor and respond to trade levels and service demand in real time

 Skills & Experience Required

  • Previous experience in a supervisory or assistant management role in a high-volume, full-service restaurant
  • Strong understanding of restaurant floor operations and service flow
  • Proven ability to lead teams during high-pressure service periods
  • Excellent communication and interpersonal skills
  • Strong problem-solving ability and calm decision-making under pressure
  • Availability to work flexible hours including nights, weekends, and public holidays
