Inspired by Lennox Hastie’s time in the foothills of the Basque Country, Gildas pays tribute to the original pintxo from San Sebastián — a simple combination of guindilla pepper, olive and anchovy. The dish shares its name with the 1946 film Gilda, starring Rita Hayworth, which was screening at the San Sebastián Film Festival when the pintxo was created.

The Role We are currently seeking a Section Waiter (casual, approximately 25 hours per week) to join the team. This role requires a confident and experienced hospitality professional who can deliver attentive, polished service in a fast-paced, high-quality environment.

What We’re Looking For You’ll bring at least two years’ experience in a fine dining setting, with the confidence to carry three plates and manage a section effectively. You’re a strong communicator who enjoys engaging with guests and has a genuine passion for food, wine, and cocktails. You thrive under pressure, can prioritise tasks efficiently, and take pride in being a supportive team player. Availability for nights and weekends is essential, along with full Australian working rights.
