About The Q Train
The Q Train is an award‑winning rail‑restaurant experience that showcases the best produce from the Bellarine, Geelong, and Otways regions. Operating from Drysdale and travelling along the historic Bellarine Railway, we serve a seasonal degustation menu onboard a moving, fully refurbished heritage train.
Our team is small, supportive, and proud of the unique experience we create for guests. Working with us means becoming part of a tight‑knit kitchen and service team that values professionalism, teamwork, and care. We currently have a team of around 20 staff across kitchen, operations, and front‑of‑house.

About the Role
We are seeking a Second‑Year Apprentice Chef (or a technically advanced First‑Year) to join our kitchen team. This position has become available due to internal progression and the continued growth of our business.
You will work closely with the Head Chef and qualified chefs in our galley‑style kitchen aboard the train. Because we work in very close proximity and communicate constantly during service, this role suits someone who enjoys being part of a collaborative, respectful team.
Your week will include four days onboard or in prep, and one day at trade school in line with your apprenticeship training.
Tasks & Responsibilities
- Assist with preparation, cooking, and plating of dishes to recipe specifications.
- Maintain exceptionally clean, organised work areas and follow daily cleaning routines.
- Move safely between carriages and work confidently in a compact, fast‑paced kitchen.
- Follow allergen‑management procedures carefully and consistently.
- Support mise en place for regular services and special events.
- Communicate clearly and respectfully with the team during prep and service.
Selection Criteria
We’re looking for an apprentice who:
- Has strong attention to detail and pride in maintaining high standards of cleanliness.
- Can follow recipe cards accurately and consistently.
- Works well with others, especially in close‑quarters teamwork.
- Shows reliability, enthusiasm, and a willingness to learn.
- Communicates clearly and is comfortable asking questions when needed.
Experience in a commercial kitchen is welcome but not required.
