Stage One of the property is complete, with the opening of a 200pax a la carte restaurant and a 230 pax event space; plus a cellar door and art gallery looking over an impressive outdoor amphitheater.

Stage Two will include the addition of a hotel, restaurant, day spa and a chapel, to the property.

ABOUT THE ROLE:

Hubert Estate is looking for full-time and Commis, Demi, Chef De Partie, Sous Chefs and Head Chef with experience to join the team, providing amazing experiences to our guests in Quarters Restaurant and Harriett, our event space.

People come from far and wide to enjoy our modern Australian and European inspired dishes and those delicious wood fired pizzas, from our Marana wood fired pizza oven at Quarters Restaurant. Harriett, our event space, hosts an array of exciting events such as weddings, parties and conferences throughout the year.

Experience: More than 2 years

JOB REQUIREMENTS

THE IDEAL CANDIDATE MUST HAVE:

At least 2-3 years’ experience in a similar role in a quality restaurant or equivalent

Trade certificate (Certificate III/IV or Diploma) in Kitchen Management, Culinary Arts or Similar

Good management and team leadership skills

Experience in high volume, fast-paced restaurant environment

A passion for good food, quality ingredients and flavours

A strong work ethic and a “can do” attitude

Understanding of food safety standards

Ability to work autonomously as well as within a team

Be in Australia already, with the required Australian working rights.

Tasks include:

Coordinate, direct and control the back of house, as well as produce quality food.

Approve and refine dishes before they reach the customer, ensuring consistency and quality in the taste, portion control, presentation and food temperature

Assist in the creation of new menu items.

Assist in controlling and directing the food preparation process.

Plan orders of equipment or ingredients according to identified shortages

Manage food wastage and spoilage and assist with food cost control.

Assist with managing and training kitchen staff

Oversee the work of subordinates, to ensure they follow operating procedures.

Comply with nutrition and sanitation regulations and safety standards

Interview required
